It is a curated chapter of the chef’s journey.
Drawn from years of refinement and reinterpretation,
each course represents a defining moment in modern Spanish cuisine —
from traditional tapas roots to Atlantic luxury ingredients.
We begin with classic Spanish expressions:
Jamón, anchovy, croquetas —
then evolve toward contemporary reinterpretations like Fideuà Negra and Crab Sofrito.
At the heart of the experience stands the Red Monster and Blue Monster:
Dry-Aged Spanish Carabineros — deep, mineral, ocean intensity.
Spanish Blue Lobster from Galicia — pristine sweetness, clean Atlantic finish.
The journey continues through the soul of Spain —
Paella cooked to precise socarrat,
Iberico pork with foie gras and herb salts,
and concludes with a refined Spanish dessert progression inspired by nightlife culture and tradition.
This is a seasonal living menu.

Prepared personally by the chef.
